Vegan red curry with tofu is an aromatic, spicy Asian dish in which fried tofu cubes are stewed in a thick sauce made from red curry paste, coconut milk and vegetables (e.g. peppers, beans, ginger). It is a filling, warming, plant-based alternative to meat dishes, full of flavour thanks to a mixture of spices and herbs such as coriander and lemongrass. It goes perfectly with rice or couscous.
